There are a lot of things that go into making a video entertaining.  The most important factors to me are the following:

1) Editing
2) Flow (includes music choice)
3) Player skill (this includes difficulty of opponents as well)
4) Novelty

When you have all those things put together in a video you end up with a very enjoyable product.
